Preparing the spinash Spaetzle
Für die SpinatspätzleThaw the frozen spinach, then mix it into a nice Spätzle dough made from flour, water, eggs, water, salt, pepper and nutmeg following the basic recipe As usual, scrape through the Spätzle board into gently boiling salt water, skim off and stir in the butter. Melt another tbs of butter in a pan. Cut the Gorgonzola into small pieces.
Once the butter is hot, add the finished spinach Spätzle and the Gorgonzola and cover with cream. Season with freshly ground pepper and gently cook over medium heat until the cheese has melted and you have a smooth sauce. Adjust seasoning again if necessary and serve on pre-heated plates garnish with walnut halves... Enjoy! .
