Spread the Spätzle onto flat plates and let them cool. Then shape the mixture into cutlets, cover and let them rest for at least 3 hours.
Coat the cutlets in flour, then eggs and then breadcrumbs. Fry them in hot oil until they’re golden brown, turning them with an egg lifter. Serve with a freshly prepared endive salad.

The Recipe
Prepare the Spätzle dough as per the basic recipe; scrape the dough through the Spätzle board into lightly boiling water. When ready, scoop the Spätzle into a bowl with melted butter and grated cheese. Mix and season with salt and pepper to taste.Spread the Spätzle onto flat plates and let them cool. Then shape the mixture into cutlets, cover and let them rest for at least 3 hours.
