Scharfe Spätzle

If you don’t already have one, you should order the Spätzlewunder (Muxel’s Magic Spätzle Board) a week before making homemade Spätzle.

 Professional Advise: 
(Expertentipp) Diabolo Spätzle really are extremely hot and spicy. If you prefer a milder version simply replace the chilli peppers with chilli paste or powder. Stir some tomato puree into the dough for added colour.

Preparing Spätzle with hot chilli

Bring 4 litres (ca. 7 pints) of salt water to the boil. Mix flour, eggs, salt and ground chilli into a viscous dough with the water or milk. If the dough is too runny, add some more flour; if it’s too thick, add some more liquid.
Reduce the heat so the water doesn’t boil too vigorously. Portion by portion scrape the dough through the Spätzle board into the now simmering water. Skim off the Spätzle with a slotted spoon as soon as they float on top. Set aside. If you like it extremely hot, stir a small, fresh, very finely chopped chilli pepper into the dough.
Cut the turkey breast into thin strips, peel and finely chop the garlic, slice the chilli pepper very thinly and mix everything together in a bowl. Heat olive oil in a pan and sear the meat. Cut the onions and the pepper into thin strips, add to the pan and fry. Now stir in the Ajvar relish. Add halved black olives, season to taste with salt and pepper and simmer briefly.
Mix the Spätzle in with the Diabolo sauce; season to taste again and serve. Be careful, this is hot. But if you like it even more fiery, you can, of course, increase the amount of chilli peppers.
