RED KIDDIES’ SPÄTZLE WITH A MILD CHEESE SAUCE
Not just for children – everyone loves a bit of colour
If you don’t already have one, you should order the Spätzlewunder (Muxel’s Magic Spätzle Board)) a week before making homemade Spätzle.
You can, of course, buy ready-made carrot puree in the baby food section of your local shop.

Preparing red kiddies’SpätzleChop the carrots and puree them. Add half the whisked egg, flour, a pinch of salt and approx. 50 ml (ca. 2 fl oz) milk. Stir everything into a smooth dough and scrape everything into lightly boiling salt water through the Spätzle board.
As soon as the Spätzle float on top, skim them off and mix in some butter. Heat the rest of the milk, add the soft cheese and gently season the sauce with a little pepper, salt and nutmeg.
