Preparing red kiddies’Spätzle

Chop the carrots and puree them. Add half the whisked egg, flour, a pinch of salt and approx. 50 ml (ca. 2 fl oz) milk. Stir everything into a smooth dough and scrape everything into lightly boiling salt water through the Spätzle board.
As soon as the Spätzle float on top, skim them off and mix in some butter. Heat the rest of the milk, add the soft cheese and gently season the sauce with a little pepper, salt and nutmeg.
