Sweat Spaetzle With Curd

Shopping list :

300 g (10.5 oz) flour
300 g (10.5 oz) low-fat curd
3 eggs
Salt and a little nutmeg
2 tbs butter

This is how it’s done:

Mix all the ingredients into a viscous dough Scrap portions of the dough through the Spätzle board into lightly boiling salt water.
As soon as the Spätzle float on top skim them off with a slotted spoon.
Rinse under cold water to prevent them from sticking together.

Sweet, lukewarm stewed apples and cranberries go well with this dish.
For a special treat serve with vanilla sauce.
