Spätzle with poppy seeds – a dish for young and old alike
If you don’t already have one, you should order the Spätzlewunder (Muxel’s Magic Spätzle Board)) a week before making homemade Spätzle.
For sweet Spätzle, curd (or quark) is a great alternative to using water or milk to make the dough.

Preparing Spätzle with poppy seedsMix flour, eggs and curd into your basic Spätzle dough with a very small amount of salt and some vanilla sugar. Then scrape the dough into slightly boiling salt water as usual. Skim off the Spätzle as soon as they float on top. Meanwhile melt some butter in a pan, add the Spätzle and mix well.
Arrange on a plate, dust with icing sugar and sprinkle with poppy seeds.
